Apple Spice Mini Loaves

My grandpa gave me apples the other day! I do eat one a day religiously as the saying goes. In addition, I could not wait to use them in recipes and make homemade apple butter.  We did end up placing a batch of apples in the slowcooker for homemade apple butter to give out at the holiday this past weekend.

 I personally feel like there is nothing better than homemade thoughtful gifts to give out during the holidays to our friends and family. 

This recipe yields: 4 mini loaves

Ingredients:

3 cups of whole wheat pastry flour

1 teaspoon baking Soda

1/2 teaspoon of kosher salt

2 Tablespoon ground flaxseed

1 teaspoon ground  apple pie spice

1 2/3 cup granulated sugar or raw sugar 

1/2 cup egg white substitute 

1 whole egg

1 Tablespoon of pure vanilla extract

1/2 cup canola oil

1/2 cup unsweetened applesauce 

1/2 cup plain or vanilla Greek nonfat yogurt 

3 cups of apples (peeled, cored, and diced)

Directions:

1. Preheat oven to 350 degrees. Cooking spray mini loaf stoneware. Set aside. 

2. Place the first 6 ingredients in a large bowl and whisk together. Set aside.

3. In another large bowl mix together the liquid ingredients (egg substitute, egg, vanilla, oil, applesauce, yogurt). 

4. Add the dry ingredients to the wet using a silicone spatula. Incorporate until all the ingredients are wet with no dry residue. Caution not to over mix. Lastly fold in the apples. 

5. Divide the batter evenly into the prepared  mini vessels ( each one takes about 1.5 cups).

6. Bake for 35-40 minutes or until toothpick comes out without wet residue. 

7. Allow the breads to cool in pan for 5 minutes then invert onto wire rack for remainder of cooling process.

Old Fashioned Apple Strudel

 

We bought an abundance of apples from our local farmer’s market a few weeks ago. Two weeks ago my husband and I made applebutter for the holiday. We like to pass it out as gifts in addition to our baklava. 

It is very popular and one of our most requested canned goods. We are actually making two batches. 
  

With all the pre of the apples I decided to also through this dish together. 

Ingredients:
1 cup whole wheat pastry flour 

1 tsp baking powder

1 /2 tsp baking soda

1/4 tsp kosher salt

1 1/2 tsp ground cinnamon 

1 tsp ground apple spice

1 tsp lemon juice

3 cups of sliced apples (not peeled)

1/2 cup honey 

3/4 cup raw sugar

1 tb hemp seeds 

1 tb canola oil

Directions:

Preheat oven to 350 degrees

1. Arrange apples in greased with Pam Spray baking dish. 

2. Drizzle honey over apples and sprinkle with apple pie spice, cinnamon & lemon.

3. In a separate large bowl sift flour, sugar, baking powder, baking soda, salt. 

4. Add egg to the dry ingredients and mix with hands until dry course texture. Spoon mixture over the apples evenly. Sprinkle with hempseeds.

5. Bake for 30-40 minutes on 350 degrees or until crust is golden brown. 

Apple Breakfast Oat Bars

  

I was saving these apples from my grandpa’s to make an apple crisp but what the heck this is like an apple crisp for breakfast. I’m going for it! Oh happy Sunday!
Preheat oven to 350 degrees. parchment line an 8 by 8 baking pan. Set aside. 
Ingredients:

Oat Pastry Ingredients:

1 cup Old fashioned Oats

1 cup Whole Wheat Pastry Flour

1/2 cup raw sugar

5 TB Canola Oil

3 TB unsweetened applesauce

1/2 TB ground Vietnamese cinnamon 

pinch of kosher salt

1 TB Ground Flaxseeed

Apple filling:

4 small transparent (early) apples (cored and sliced thin)

1 tsp ground Vietnamese cinnamon

1 TB unsalted butter

2 TB raw sugar 

Pinch of kosher salt 

This recipe yields 9 bars 
Directions:

1. Place apples, cinnomon, butter, 2 TB raw sugar in small quart pan on low to medium heat. Heat apples for 5-7 minutes until they start to break down almost like chunky applesauce. Stir occasionally. After time has elapsed allow to cool slightly prior to placing on oat batter. 

2. In a medium bowl mix together flaxseed, applesauce, canola oil, oats, cinnamon, sugar, and pastry flour. Mix with hands until mixture is course but well incorporated. 

3. Divide oat mixture in half. Place half the mixture down on the bottom of the 8 by 8. Press into the parchment paper. Place the slightly cooled apple filling on first layer. Spread evenly. Finally top with remains oat mixture. Make sure to spread the topping evenly.

4. Bake for 45 minutes and remove from oven and allow to cool on wire rack before cutting into bars. 

  

Apple Coffeecake

An apple a day keeps the doctor away! But  unfortunately I don’t count the ones in baked goods. I did try and cut some of the extra sugar that the original recipe called for. 

This recipe makes 4 servings 

Pre-directions

Preheat oven to 350 degrees. Cooking spray an 8 by 8 oven safe  glass dish. Set aside. 

Ingredient 

1/2 cup Ap flour

1/2 cup whole wheat pastry flour

1/2 cup plus 1 1/2 TB raw sugar 

3/8 tsp baking soda 

1/4 tsp kosher sat

1 tsp ground Vietniemesse cinnamon

1/4 tsp allspice

1/8 tsp ground nutmeg

1/8 cup canola oil

1/4 cup puréed pumpkin (not pumpkin pie filling) or unsweetened applesauce 

1 large egg

1 extra extra large apple (I used jonnygold but use what you have) about two cups (diced & cored but not peeled) the peel is where the nutrition is and fiber! 

1/4 cup canned pecans chopped 

Cooking spray

8 by 8 baking dish 

Directions:

  1. Place flours, candied pecans, baking soda, salt, nutmeg, allspice, 1/2 tsp cinnomon, 1/2 cup raw sugar in large bowl. Mix to fully incorporate all the dry ingredients.

2. In a separate small bowl mix oil, pumpkin, and eggs to incorporate.

3. Add wet ingredients  into dry, along with apples. Mix until no dry ingredients remain. The batter will be chunky.

4.  Place in cooking sprayed pan and spread batter evenly. And sprinkle with remain 1 1/2 TB of raw sugar and 1/2 tsp cinnamon.

5. Bake for 35 minutes at 350 degrees! Or until tooth pick comes out clean.

Apple Cinnamon Scones

My husband told me this weekend one of his favorite breakfast dishes that I bake our my scones. This past Sunday I took his advise and I decided to try an apple chip scone for our brunch.

Yields 15 -16 small scones

Ingredients:
200 g AP flour
80 g Whole Wheat Flour
3/4 cup of dehydrated cinnamon apple rings, chopped
80 g butter unsalted (cold and cut)
1 tsp Chinese 5 spice
2 tsp baking powder
1/2 tsp baking sofa
175 ml buttermilk
1/2 tsp kosher salt
1/8 cup packed brown sugar
1/4 to 1/3 cup cinnamon chips
Cinnamon and sugar to dust (optional)

Directions:

Preheat oven to 425 degrees

1. In a medium bowl mix both flours, Chinese five spice, salt, baking soda, & baking powder.

2. Cut butter into the flour. You can use a pastry cutter or my personal favorite my fingers to breakup the butter into the dry ingredient mixture to the consistency of large wet sand granules .

3. Add chopped apples and mix. If you rather have the cinnamon chips inside mix at the same time as the apple chips. In fact I might do that next time.

4. Pour in buttermilk, use a spatula to incorporate the wet and dry ingredients together. Please be careful not to over mix the batter.

5. Divide the dough evenly into the cooking sprayed scone pan. Sprinkle with cinnamon and sugar. If you choose to add the cinnamon chips now, place the cinnamon chips on the tops of the scones. (Mine turned out slightly darker on top so I think next time I’ll incorporate the chips in the batter as mentioned above).

6. Bake for 12 minutes or until lightly brown and tooth pick comes out clean.

7. Remove from pan after allowing to cool in pan for 3-5 minutes and place on wire rack. Enjoy with a good cup of tea!

Apple Whole Wheat Muffins

I am a true believer of an apple a day will keep the doctor away! I am an avid follower of that saying. Here is an easy way to add some apple into your diet if have a love of apples like I am.

Ingredients:
1 cup of shredded apple ( no need to peel) you need they extra fiber !!
1 1/2 cup whole wheat pastry flour
1/2 cup raw sugar
1/2 tsp ground high quality cinnamon
1/4 tsp ground nutmeg
1 3/4 tsp baking powder
1/2 tsp salt
1/3 cup canola oil
1/4 cup egg substitute or 4 egg whites
3/4 cup (6oz) vanilla fat free yogurt
Zest of one small orange
1/2 tsp Mexican Vanilla or high quality vanilla
Cooking spray

Topping
Cinnamon and sugar to taste
Cooking spray

This recipe yields 12 muffins

Directions:

1. Preheat oven to 350. Line 12 standard muffin tins

2. Take flour, sugar, baking powder, salt, spices and zest of orange place in a large bowl and whisk together.

3. In a small bowl mix together yogurt, egg substitute, vanilla, and oil.

4. Pour liquid batter into dry ingredients.

5. Fold the batter together try not to over mix.

6. Add shredded apple.

8. Potion out using 2 oz scoop into lined and cooking sprayed
muffin tins.

9. Bake for 22-23 minutes on 350 degrees.

10. Let muffins cool in tin for 3 to 5 minutes remove from tin spray with cooking spray and sprinkle with cinnamon and sugar.

Apple Streusel Crescent Bites

Apple  Streusel  Crescent BItes

 

These tasty little bites are not too sweet, in fact just right. I used my grandfathers apples leftover from his orchard last year ( I have been savoring them). I was cleaning out the refrigerator and noticed I was stock piling up on crescent rolls. Apparently I did not do inventory very well last time I went to the grocery store. This is a great way to use up some of the extra inventory. Plus I got to use my new pampered chef brownie pan again !!!

 

Ingredients:

1 package of reduced fat crescent  rolls

3 medium apples cored, peeled and diced

1/2 tsp ground cinnamon

Cooking Spray (canola oil is my favorite)

 

Streusel Topping

1/8 cup of cinnamon sugar blend (a good ratio is 1/4 cup sugar to 1 TB cinnamon)

1/8 cup AP flour

1 TB unsalted Butter (diced)

This recipe yields 8 streusel bites

Directions:

1. Preheat oven to 325 and spray with cooking spray either a mini preportioned brownie pan or stand size muffin pan.

 

2.  Take a medium sized nonstick saute pan and heat to medium low heat. Cooking spray the pan and add the diced apples and cinnamon.

Sauté for 5 to 7 minutes while the apples caramelize.

3. In the meantime take the crescent roll package and lay out the dough on cutting board. Seam together two of the crescent each making 4 rectangles. Once 4 rectangles are formed cut into 8 squares. As pictured below.

4.  Take the squares and place them individually in the pan. Press the dough lightly down to form a vessel for the caramelized apples.

5. Add a TB and a half of the Caramelized apples into each vessel.

6. In a small bowl combine cinnamon sugar, flour and butter. Run the butter through your fingers with the sugar and flour to break into small particles.

7. Add one TB of cinnamon sugar mixture onto the apples.

8. Bake for 13 minutes on 350 degrees.

9. Let cool on wire rack in pan for 5 minutes.

Vegan Apple Crumble Tart

For the love of apples and the fall. This is a quick and easy tart you can put together in a pinch. I am trying to use my large bountiful supply of my grandfathers  homegrown apples. I have already made several baked goods, applesauce, apple butter, and not to mention eating one raw everyday. I needed a quick recipe for a work meeting. I always try and bake a goodie for our quarterly meetings. I have a strong belief “if you bake something delicious they will come”.  So far it seems to work!

 

Ingredients:

 

1/2 Whole Wheat Flour

1/2 Cup AP Flour

1 Cup of Quick Oats

1/4 Tsp of baking soda

1/2 Cup of Canola Oil

2/3 cup of brown sugar (not packed)

Apple Filling:

2 Cups of shredded Apples (at least two large apples shredded (not peeled that is where all the “good stuff” is))

2 TB of sugar

2 tsp of cinnamon (Vietnamese is my favorite )

1 tsp ground cloves

1/8 tsp nutmeg

1/8 tsp mace

1 TB of apple cider

 

Directions:

1. Preheat oven to 350 degrees and place parchment paper inside of tart pan (or a 9 by 9 pan) and spray with cooking spray to coat the pan.

2. Place filling ingredients in microwave safe bowl and microwave in one minute intervals string after each minute (your house will smell amazing). Set aside.

3. Place all the dry ingredients for topping in a medium bowl mix with whisk until combine.

4. Take a heaping cup of the crumb mixture and press it into the bottom of the tart pan.

5. Once the bottom is pressed evenly add the apple topping on to the crust and spread evenly with spatula .

6. Once the filling is spread evenly sprinkle the remainder of the crumb topping on dish.

7. Bake for 30 to 35 minutes or until crumble topping is golden brown. Let completely cool on wire rack before cutting into.

Apple Coffee Cake with Almond Meal

I went to visit my grandma and grandpa this past weekend and they surprised me with sereval bushels of apples.

Which has led me to explore many different recipes utilizing apples!
This one here is prefect for breakfast!

Ingredients;

1/4 cup canola oil
3/4 cup brown sugar (lightly packed)
1 egg (preferably local)
1/2 cup almond meal (aka almond flour)
1/2 cup whole wheat pastry flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 cup fat reduced sour cream or plain greek yogurt
1 tsp pure vanilla (Mexican)
1 cup peeled, cored and chopped apples

Crumble topping
1/4 cup brown sugar
1/4 cup of whole wheat flour
1/2 tsp cinnamon
2 TB butter (unsalted)

Glaze

1/4 cup brown sugar
1/2 tsp vanilla extract
1 TB Apple cider

Directions:
Preheat oven to 350 degrees and spray with cooking spray a 6 cup capacity glass baking dish (mines a 8″ by 6.5″)

1. In a medium bowl sift together flour, almond meal, spices, baking soda and salt.

Set aside.

2. Mix oil, sugar, and vanilla.

Add egg.

2. Start to add the dry ingredients into the wet.

3. Fold in chopped apples.

4. Place batter into prepared baking dish.

Set aside while you prepare the crumble topping.

5. Place all crumble topping ingredients into a small bowl.

Break apart ingredients with bare hands until mixture resembles crumbs. Sprinkle onto top of batter in glass dish.

Bake for 30 to 35 minutes or until toothpick comes out of center clean.

In a small bowl mix apple cider, vanilla, and brown sugar.

Apple Streusel Whole Wheat Muffins

Which inspired me to make a coffee cake type of apple muffin this morning.

Ingredients:
1 1/2 cup whole wheat pastry flour
1 TB flaxseed milled
1/4 cup sugar
3/4 tsp Vietnamese ground cinnamon
2 tsp baking powder
1/4 tsp salt
1/8 tsp ground nutmeg
1 farmers egg
3 TB canola oil
1/2 cup skim milk
1 cup of Apple, peeled, & shredded (about 1.5 medium apples)

Topping:
1/4 cup brown sugar
2 TB whole wheat pastry flour
1/2 tsp ground cinnamon
1/3 chopped pecans
2 TB of soften butter (unsalted)

1. Preheat oven to 400 degrees and line 12 muffin tins with either silicon or paper liners and spray with cooking spray to prevent sticking.

2. In a medium bowl combine flour, sugar, cinnamon, nutmeg, baking powder, salt, and flaxseed.

Mix to incorporate all ingredients well.

3. In a separate medium bowl combine oil, egg, and milk.

Whisk to incorporate.

4. Add dry mixture to wet.

Mix until just moistened (be careful not to over mix).

5. Shred 1 to 2 apples to yield one cup of shredded apple.

6. Fold apples gently into batter.

7. Spoon half the batter evenly into 12 muffin tins.

Set aside

8. In a small bowl place streusel topping ingredients.

Use your hands to incorporate crumble topping mixture.

9. Set aside 3-4 TB of topping.

10. Place one TB of remaining topping in each muffin tin on top of the wet batter.

11. Spoon evenly the remaining batter on the top of the streusel topping in tins.

12. Bake in oven for 20 minutes or until a toothpick comes out of center clean.

13. Let cool in tin for 3 to 5 minutes on wire rack.
