Spice Chocolate Doughnut Holes

  

I was able to go through my grandmothers cookbooks and I came across this lovely gem that was published in the 1970s. 

This cookbook made me laugh because it calls for chocolate bars that cost $.10. Sorting through the cookbook I stumbled across this doughnut recipe which inspired me to create these doughnut holes.

I made some modifications to bring it up-to-date. I prepared it this past weekend for my husband for breakfast.

This recipe yields 16 doughnut holes

 Pre-heat oil to 370 degrees.
 Ingredients:

1 cups of whole wheat pastry flour

 1/4 cup of dutched processed cocoa

1 1/4 teaspoons of baking powder

1/4 teaspoon of baking soda

1/8 teaspoon of  kosher salt

1/8 teaspoon  of ground mace

1/8 of ground Vietnamese cinnamon

1 1/2 teaspoons of canola oil

One egg

1/4 cup of skim milk

1/4 and 1/8 cup of granulated sugar

1 teaspoon of pure vanilla

Directions;

In a medium bowl  sift together cocoa, baking powder, salt, flour, baking soda, and spices. Set aside.

In a small bowl mix together sugar and oil. Add egg, milk, vanilla and mix to incorporate.

Pour wet ingredients into dry ingredients and mix thoroughly.

Using a size 60 scoop, portion out the doughnuts into the hot oil frying for a total of four minutes but flipping every minute or so. Place greased doughnuts on a plate lined with a papertowel. Once slightly cooled sprinkle with powdered sugar.

Triple Chocolate Hazelnut Cookies

My husband and I went to a taste of home show in October we were given a few jars of chocolate hazelnut spread and I have been itching to use it ever since! Since we are getting close to Christmas I cannot imagine a better time then now to incorporate the spread into cookies! This recipe was inspired by Jiff’s Jiff’s Double Chocolate Hazelnut Cookies

Preheat oven to 325 degrees. Line a half sheet baking pan with parchment paper (makes for easy clean up)!

Ingredients:
1 1/4 cup AP Flour
2/3 cup high quality cocoa powder
3/4 cup sugar
1/3 cup skim milk
1/2 kosher salt
1 tsp baking powder
1 & 1/4 cup white chocolate chips
1/2 cup vegetable shorten
1/2 cup chocolate hazelnut spread
1 tsp Mexican vanilla extract
Sugar to roll cookies into (1/4 cup)

Yields about 36 to 38 cookies using a number 60 scoop.

1. Beat shorten and sugar together until fluffy.

2. Add vanilla and continue to beat.

3. Add hazelnut spread and continue to beat with paddle attachment.

In a separate bowl sift flour, cocoa powder, salt and baking powder.

Now mix ingredients together with spoon.

Start to add flour and alternate between flour and milk and beat after each addition to incorporate ingredients together.

The dough will appear very soft. Add in chips.

Bake at 325 degrees for 10 to 12 minutes.

Whole Wheat Avocado Brownies

My sister has been trying to get me to make some avocado baked goods for a while. We are celebrating her birthday this weekend! I cannot think of a better time to try brownies with avocado instead butter.

Ingredients:
One large avocado mashed
1 cup of sugar
2 farm fresh eggs
1/2 tsp almond extract or vanilla extract
1/4 tsp salt
1/4 baking powder
1/2 cup whole wheat pastry flour
1/3 cup Dutch processed cocoa (use high quality cocoa; it’s worth it)

Preheat oven to 350 degrees.

1. Place avocado, sugar, and almond extract in food processor.

2. Pulse until cream like.

3. Add one egg at a time.

4. In a separate bowl sift flour, cocoa, salt, and baking soda.

5. Mix with spoon until dry ingredients blended well.

6. Add dry mix into creamy avocado mixture.

7. Pulse until combined.

8. Pour batter into a cooking sprayed 9 inch baking dish.

Spread evenly

9. Bake for 23 to 25 minutes on 350 degrees or until toothpick comes out clean.
