Apple Coffeecake

An apple a day keeps the doctor away! But  unfortunately I don’t count the ones in baked goods. I did try and cut some of the extra sugar that the original recipe called for. 

This recipe makes 4 servings 

Pre-directions

Preheat oven to 350 degrees. Cooking spray an 8 by 8 oven safe  glass dish. Set aside. 

Ingredient 

1/2 cup Ap flour

1/2 cup whole wheat pastry flour

1/2 cup plus 1 1/2 TB raw sugar 

3/8 tsp baking soda 

1/4 tsp kosher sat

1 tsp ground Vietniemesse cinnamon

1/4 tsp allspice

1/8 tsp ground nutmeg

1/8 cup canola oil

1/4 cup puréed pumpkin (not pumpkin pie filling) or unsweetened applesauce 

1 large egg

1 extra extra large apple (I used jonnygold but use what you have) about two cups (diced & cored but not peeled) the peel is where the nutrition is and fiber! 

1/4 cup canned pecans chopped 

Cooking spray

8 by 8 baking dish 

Directions:

  1. Place flours, candied pecans, baking soda, salt, nutmeg, allspice, 1/2 tsp cinnomon, 1/2 cup raw sugar in large bowl. Mix to fully incorporate all the dry ingredients.

2. In a separate small bowl mix oil, pumpkin, and eggs to incorporate.

3. Add wet ingredients  into dry, along with apples. Mix until no dry ingredients remain. The batter will be chunky.

4.  Place in cooking sprayed pan and spread batter evenly. And sprinkle with remain 1 1/2 TB of raw sugar and 1/2 tsp cinnamon.

5. Bake for 35 minutes at 350 degrees! Or until tooth pick comes out clean.

Mickey Mouse Buttermilk Wheat Pancakes

We had my nephew over this weekend and we just returned from Disney and thought what better way to celebrate the weekend? Then with Mickey Mouse pancakes! max also loves spiderman and I couldn’t believe we found a Mickey Mouse hat with spiderman.

8 Mickey Mouse pancakes

Ingredients:

1 cup ap flour

1 cup whole wheat pastry  flour

2 eggs

1 tsp vanilla extract

1/2 cup dried blueberries

2 cups buttermilk 

1/8 cup sugar

1 tsp salt

1 tsp baking soda

3/4 tsp baking powder

Directions:


Mix both flours, salt, soda, baking powder, & sugar in large bowl.


Wearing the Mickey Mouse ears helps. 

Set aside.

In a medium size bowl whisk eggs, vanilla, and buttermilk.

Add wet ingredient into dry and mix to incorporate.

Fold in dried blueberries. 

Heat griddle pan to medium to medium low temp.

Spray griddle with cooking spray and place pancakes as you desire onto preheated pan.



Allow to heat until you see bubbles form and flip accordingly. The second side does not take as long as the first.

Spice Wheat Waffles

We had the pleasure of having my nephew stay the night. One of my favorite things to do when he stays is make breakfast with his help. Today we made homemade waffles.

By the looks of this picture I think he liked them okay!

This recipe yields 6 (6 1/2 inch in diameter) waffles

Ingredients:
3/4 cup whole wheat flour
3/4 cup AP flour
1 tsp ground Cardamon
1 tsp ground cinnamon
1/4 tsp allspice
1/4 tsp salt
3/4 tsp baking soda
1 1/2 tsp baking powder
1/2 cup egg substitute or 4 egg whites
1 cup skim milk
1/3 cup brown sugar (not packed)
1 5.3 oz container of greek cinnamon vanilla or plain greek yogurt
1 tsp of vanilla extract (I prefer Mexican)
1 TB canola oil

Directions:

Take the first 8 ingredients and place them in a large bowl and whisk together ( this was the fun park for my nephew).

In a separate bowl whisk egg substitute, milk, sugar, vanilla, greek yogurt, & canola oil.

The kids can also help with this part.

Now pour the liquid batter into the dry ingredients.

Whisk until all the ingredients are incorporated with no signs of dry flour.

Heat your waffle iron according to manufacture’s directions.

Follow manufacture’s directions as to how much batter to fill the hot waffle iron with. My iron used about 2/3 cup but every iron is different.

Cook for as long as you like and again stick with the directions for your iron.

Honey Wheat Dinner Rolls

This year I was assigned the dinner rolls for Thanksgiving! I always like to try a new recipe and I am always trying to add wheat flour to traditional recipes. But I like to add the whole grain flour in small doses because not everyone likes the nutty flavor of wheat.

This recipe yields 3 dozen rolls.

Ingredients:
1/2 cup warm water
1 1/2 cup warm skim milk (not hot it will kill the yeast)
4 1/2 tsp yeast (2 packets)
1/2 cup sugar
1 TB kosher salt
1/3 cup shortening
2 eggs (farm fresh or egglands best)
6 cups of AP (all purpose flour)
1 cup whole wheat flour
1 TB honey

Directions:

Place the yeast in the half cup of water and allow to foam ( the process can take up to 5 minutes)

If the yeast doesn’t foam you have bad yeast and throw it away and buy new.

Combine milk, sugar, honey , salt in a separate bowl and stir to dissolve.

Place milk mixture, yeast mixture, along with shortening,eggs, 1 cup of flour and beat until smooth with whisk attachment.

Add remaining flours (save 1/2 cup to add gradually and also for when you knead onto hard surface).

Using stand mixer knead with dough hook for 5 to 10 minutes on medium speed (gradually work your way up to medium if not flour will go everywhere!)

Remove from mixer once the dough no longer sticks to sides of bowl.

Lay the dough on a clean lightly floured surface.

And knead by hand for a minute until dough is smooth, elastic and no longer sticky.

Spray a large bowl with cooking spray and roll dough in the bowl to cover with the dough completely with the oil. Place parchment paper in top of the dough with a warm damp cloth.

Allow the dough to rise in refrigerator for up to 3 days. Or go straight to allowing the dough to rise for 1 hour and form into shape desired for roll. Form dough into large grape sized balls and cover with plastic wrap and let rise again for another hour. As shown I divided them into 3 balls and placed in cooking sprayed muffin tins to rise.

They should double in size before baking.

Preheat oven to 375. Place oven rack in center of oven.

Bake for 14 to 15 minutes.

Let cool in place for 5 minutes and serve.

These go well with canned hot peppers or apple butter!

Whole Wheat Buttermilk Biscuits

I had to make biscuits to go with yesterday’s homemade apple butter! This recipe was adapted from a Taste of Home recipe

http://www.tasteofhome.com/Recipes/Rolled-Buttermilk-Biscuits.  I of course made of few changes to incorporate some whole

grain goodness.

1 cup whole wheat pastry flour
1 cup AP Flour
3 Tsp Baking powder
1/2 tsp baking soda
1/4 tsp salt
3 TB cold butter (unsalted)
1 cup buttermilk
1 TB skim milk

Directions:

1. Preheat oven to 450.

Place both flours, salt, soda, baking power in bowl.

2. Cut butter into dry mixture.

3. Until resembles course texture.

4. Pour buttermilk into dry mixture.

5. Mix with wooden spoon just until ingredients are combine.

6. Sprinkle flour onto a clean surface and knead dough 2 to 3 times.

7. Roll dough with floured roller.

Cut 12 cutouts with 2 1/2 inch biscuit cutter.

8. Roll second time and cut 12 more biscuits.

9. Layer biscuits on top of each other in rows of two on parchment paper.

10. Brush with the skim milk.

11. Bake for 10 to 12 minutes on 450 degrees.

Yields 12 biscuits!

Plus it goes well with Apple Butter

Grandma’s Zucchini Cookies

 

Grandma’s Zucchini Cookies

My grandma always had fresh zucchini from her garden in the summer. She would make me these cookies all the time !! They are very versatile you can add whatever nut you like or swap out the raisins and go for chocolate chips if you rather. This recipe always bring me back to childhood! I make them every year for my family. Not to mention these cookies are egg free
and dairy free !

34 Serving. Prep Time: 15 min. Cook: 12 min.
Ingredients:
  • 1 cup of grated zucchini (peeled or not either way but not peeled will give you more fiber!!)
  • 1 cup of sugar
  • 1 teaspoon of baking soda
  • 0.5 cup canola oil
  • 1.5 cups of AP flour
  • 0.5 cup of whole wheat flour
  • 1.5 teaspoon of cinnamon
  • 0.5 teaspoon of cloves
  • 1/4 teaspoon of nutmeg
  • 0.5 teaspoon of salt
  • 1 cup of raisins
  • 0.5 cup of chopped walnuts

Directions:

Mix the sugar and oil together until combined. Mix this recipe by
hand not a mixer. In a separate bowl mix remainder of dry
ingredients together then mix into sugar and oil mixture w/ spatula.
Fold in zucchini, raisins, and walnuts at the end.

Drop on cookie sheet w/ parchment and spray w/ cooking spray.
Bake on 375 for 12-15 minutes or on convection at 325 for 8-10
minutes, until cookies are browned.
